About Beans:
Finca San Antonio in Nariño is one of our favorite farms in Colombia. While the washed Geisha is known for its floral notes, citrus, and juicy character, this semi-washed Geisha—thanks to the retention of some mucilage—shows more pronounced candy and honey-like sweetness. The cup evokes orange candy, honey tangerine, ripe sweet apricot, and black plum.
Compared with a traditional fully washed process, semi-washed involves less intensive washing and leaves a portion of the natural mucilage intact during drying. Through a slow and gradual drying process, this residual mucilage is transformed into richer sweetness and distinctive flavor complexity, while still preserving the clarity and varietal character expected of Geisha.
