Sidra from Ecuador is renowned for its exceptional sweetness. This natural Sidra from El Alisal Estate expresses that sweetness vividly even from a roasting perspective. Despite being roasted in the realm of a true ultra-light roast—where heat application and dehydration are kept to an absolute minimum—the color of both the whole beans and the ground coffee appears intensely rich, reminiscent of deep red sugar.
Although the sweetness is striking, the texture remains clear and transparent. Within this clean, high-sweetness profile, notes of orange juice, blueberry, and apricot unfold with clarity. The pronounced sweetness comes not only from the estate’s extreme elevation of 2,020 meters and the hand-harvested, perfectly ripe red cherries, but also from the meticulous processing led by producer Leonidas Jaramillo: hand selection, flotation, 12 hours of whole-cherry pre-fermentation, 72 hours of tank fermentation, 72 hours of pre-drying, followed by 28 days of shaded drying.
This refined and complex process—closely monitored for temperature and humidity at every stage—proves that the flavors in the cup faithfully reflect the producer’s rigor and dedication throughout the entire production chain.
