About Beans:
Finca La Comarca is located in the Malacatos Valley of the Loja region. Female producer Isadora maintains extremely high standards in every stage of planting, harvesting, and processing.
The farm features wide planting spacing, dense shade trees, healthy coffee trees, and purple-red cherries. During harvesting, Isadora is extremely strict about ripeness—the base of the cherry near the stem must also be fully purple-red before it can be picked, and the Brix level must reach 22 or higher. The water used to wash the cherries is pure and clear, the blue washing tanks and fermentation tanks are spotlessly clean, and the stacking thickness and turning requirements during drying are equally rigorous.
These exacting standards at every stage result in coffee that is exceptionally clean, with clear structure and high sweetness. Nurtured in the Malacatos Valley, the Sidra variety further highlights its distinctive character: clear hibiscus notes, brown-sugar-like sweetness, and ripe, sweet prune and black plum in the mid-to-low temperature range.
