About Beans:
“This is the finest washed Caturra we’ve ever tasted in Peru!” — that was our most immediate reaction to this coffee.
Caturra, along with Bourbon, is one of the oldest traditional varieties cultivated in Peru. This particular Caturra stands out for its exceptional sweet-acid balance. The variety’s inherent character and the terroir are perfectly intertwined, delivering a delightful flavor progression: at higher temperatures, a clean, sweet citrus note reminiscent of Wogan tangerine; then shifting into the sweet-tart character of red cranberry and apple; and at mid-to-low temperatures, a soft stone-fruit sweetness like apricot emerges.
This outstanding Caturra comes from Huayacán Farm at 1,990 meters, located just a stone’s throw from El Mirador Farm. The producer, Aracely Vasquez, is also a member of the extended Mego Silva family. Cherries were harvested and depulped on the same day, followed by 30 hours of dry fermentation, then washed and dried. This relatively restrained fermentation approach naturally highlights the high-altitude Andean terroir and the classic character of the Caturra variety.
