Pink Bourbon has long been a signature variety of Colombia’s Huila region. This washed Pink Bourbon from El Cedro, located in southern Huila, beautifully expresses the variety’s hallmark profile—distinct red bean paste notes, bright citrus acidity reminiscent of fresh oranges, a candy-like sweetness similar to orange candy, and the delicate aroma of wild strawberries.
Producer Servio Botina focuses on high-quality varieties, cultivating Pink Bourbon and Geisha on his 3.4-hectare farm. Coffees from El Cedro consistently achieve outstanding cupping results, especially from these two varieties.
For this washed Pink Bourbon, only fully ripe cherries are handpicked. The process begins with a 24-hour whole cherry fermentation, followed by depulping and 36 hours of dry fermentation. The coffee is then soaked for 12 hours before being dried on raised beds for 15 to 20 days.
