About Beans:
Aguila and Guabo are the two highest-elevation plots within El Velo Farm of Hacienda La Esmeralda, both reaching 1,850 meters above sea level. Having previously featured several exceptional Guabo lots, we had been eagerly anticipating our first release from Aguila.
The green coffee immediately exceeded our expectations. The beans are remarkably large and elongated, displaying the classic slender shape of Geisha. Their beautiful yellow-green hue, characteristic of a well-processed natural coffee, hints at the abundance of sugars and nutrients developed during the slow maturation at this extraordinary elevation.
Despite an ultra-light roast profile, the bean surface still takes on an inviting raw sugar tone, a testament to its exceptional sweetness. In the cup, delicate jasmine and white peach emerge first, followed by an intensely sweet purple grape character. The sweetness is so pronounced that it reminded our entire team of fruit candy, before finishing with a lingering floral aftertaste that seems to last endlessly.
