This Fundador 3ANB lot comes from Cañas Verdes. The cherries were harvested on January 6, 2026. After picking, the ripe cherries were placed in sealed stainless steel tanks for 120 hours of anaerobic cold fermentation. The tanks were kept in a cold room at a low temperature of 15–16°C to ensure a controlled, low-temperature fermentation. The coffee was then transferred to raised beds and dried for 34 days.
The extended 120-hour cold fermentation brings out a remarkably expressive aromatic profile. It features pink florals and pronounced sweet stone fruit notes. On the palate, it delivers vivid impressions of white peach and juicy peach flesh, with a body that is delicate and fluffy, reminiscent of marshmallow-like softness.
