About Beans:

This natural Geisha underwent a cold fermentation process that resulted in an exceptionally elegant and delicate cup. The floral aromatics are highly expressive, while the first sip reveals sweet apricot notes. As the coffee cools, layers of grape and pineapple emerge in succession, accompanied by a transparent, silky texture and a smooth, rounded mouthfeel.

The outstanding quality of this lot is largely attributed to producer Jean Paul’s extensive experience in fermentation and processing. After harvesting, the Geisha cherries were rested for 24 hours before undergoing a 12-hour cold water fermentation at 20–22°C, followed by 36 hours of dry fermentation.

The drying stage also reflects Jean Paul’s distinctive approach. Once the coffee reached approximately 17% moisture content, it was packed into bags and rested in a dark room for two weeks, allowing the internal moisture to redistribute more evenly within the beans. The coffee was then returned to raised beds to complete the final drying stage, bringing the total drying time to approximately seven weeks.
